News from Graduates
Two alums, Ralf Diaz and Doug Hall, were hired July 2010 by Legends Hospitality to work in food services for the Dallas Cowboys organization at the new stadium in Arlington.
Class 1 - In Spring 2010 Catherine, who has been employed at Colonial Country Club for three years, has been promoted to sous-chef, direct assistant to the executive chef.
Class 9 - Corey, who did his internship at Colonial Country Club and was hired, has been promoted to "garde manger" (pronunced "gärd-mäⁿ-zhā"), which is French for, literally, "keeper of the food." In most modern kitchens the garde manger is synonymous with pantry chef, having duties focusing on salads, soups, cold food items, and dessert platings. It is usually the entry level line cook position within a restaurant.
Class 11
The class graduated July 24, 2010. Students did their two-week internships at the following sites: Fort Worth Omni Hotel, Ruffino's, Colonial Country Club, Tokyo Cafe, Milano's, Fresh from the Oven, Samaritan House, Billy Bob's, The Courtyards at River Park and Julie's Fresh Kitchen.
