Broccoli with Orange Sauce
This colorful and tangy vegetable side dish is a great way to increase your servings of vegetables. Finicky eaters may be surprised to find that they like broccoli!
Ingredients
- 3-1/2 cups broccoli florets
- 1 medium red or yellow bell pepper
- 2 tablespoons finely chopped onion
- 1 tablespoon butter
- 1 clove garlic
- 1-1/2 teaspoons cornstarch
- 2/3 cup orange juice
- 2 teaspoons Dijon-style mustard
Instructions
- Wash broccoli and peppers.
- Cut peppers into 1-inch pieces. Peel and chop onion and garlic.
- In a medium saucepan cook broccoli and sweet pepper in a small amount of boiling, lightly salted water about 8 minutes or until broccoli is crisp-tender; drain. Cover and keep warm.
- Meanwhile, for sauce, in a small saucepan melt butter over medium heat. Add onion and garlic; cook until onion is tender.
- In a small bowl, combine cornstarch, orange juice and mustard. Stir until smooth.
- Add cornstarch mixture to onion and garlic. Cook and stir until thickened and bubbly. Cook, stirring for 2 minutes more.
- Pour the sauce over the broccoli mixture; toss gently to coat.
