Peanut Butter Energy Squares
These no-bake energy bars are a fun recipe to make with kids, and it doesn’t heat up the kitchen. It’s the perfect quick snack to get over the afternoon slump!
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup maple syrup
- 2 cups rolled oats
- 1/2 cup raisins (or dried cranberries)
- 1/2 cup shelled pistachios
- 1/2 teaspoon salt
- Cooking oil spray
Instructions
- Line an 8x8-inch baking pan with wax paper, leaving some extra to hang over the sides. Lightly spray with cooking spray. Chop pistachios.
- In a large bowl, mix peanut butter and maple syrup. Stir in oats, raisins, pistachios and salt. Spread the mixture into prepared pan and press in firmly.
- Refrigerate until thoroughly chilled, about 1 hour. Cut into 16 squares.
