Slow Cooker Balsamic Chicken
With a few pantry staples, you can put together a simple family meal that has a lot of flavor! Set it up in your slow cooker in the morning and come home to a tasty supper.

- Slow cooker
Ingredients
- 6 boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 medium onion
- 1 (14.5-ounce) can low sodium diced tomatoes
- 1/2 cup balsamic vinegar
- 1/2 cup low-sodium chicken broth
- chopped fresh parsley for garnish
Instructions
- Slice onion. Wipe off top of tomato can and train tomatoes.
- Combine Italian seasoning, garlic powder, salt and pepper in a small bowl.
- Place chicken breasts in bottom of slow cooker. Sprinkle seasoning mix over chicken.
- Place sliced onion and drained tomatoes on top of seasoned chicken. Pour balsamic vinegar and chicken broth over all.
- Cover and cook on low heat for 6-7 hours, or on high heat for 3-4 hours. Chicken is done when meat thermometer reads 165 degrees in the thickest part of the meat.
- Serve with chopped parsley, if desired. Serve with quinoa, rice or pasta.

Smart Shopping Tips
- You don’t have to buy Italian seasoning if you don’t already have some. You can make some yourself with herbs on hand. For each teaspoon of Italian seasoning, use 1/4 teaspoon each of basil, thyme, rosemary and oregano. You could also add a little sage and garlic powder if you like.
- It is advisable to start with thawed meat or poultry when using your slow cooker. Defrosting in the refrigerator overnight is recommended.
- If you are preparing ingredients for slow cooking ahead of time, be sure to prep vegetables and meat separately. Store them separately in the refrigerator.
- Make sure not to overfill your slow cooker. It should be half to two-thirds full for even cooking.
- Fresh, chopped basil is also an excellent garnish.
