Chef John Croatti Shares Grilled Strawberry Shortcake Recipe

Grilled Strawberry Shortcake Recipe
Ingredients
1 pound strawberries, hulled
1 pound butter cake, cut in 1-inch cubes
1 tablespoons brown sugar
1 pint Greek yogurt
1 pint heavy cream
1 teaspoon vanilla extract
2 tablespoons granulated sugar
Tools
Bamboo skewers
Canola oil and old dish towel to oil grill
Instructions
Preheat grill to medium high. Clean, rinse and drain strawberries and toss with brown sugar. Skewer strawberries and cake cubes, one of each on each skewer.
Whip cream, yogurt and sugar. Set aside.
Use dish towel and oil to wipe grill grates just before putting skewers on, this will keep cake from sticking.
Grill one side of each strawberry shortcake skewer for 30-60 seconds. Flip then grill for 30-60 more seconds.
Remove and serve with whipped cream and yogurt for dipping.
