Chef John Croatti Shares Grilled Strawberry Shortcake Recipe

This recipe from Chef John Croatti proves that you really can whip up anything on the grill, including strawberry shortcake! Chef Croatti is one of our dedicated volunteers with Cooking Matters, a program that teaches people how to eat healthy on a budget.

From the Demonstration Kitchen at Tarrant Area Food Bank in Fort Worth, Texas, Chef Croatti grilled up this tasty treat for a live audience and shared his recipe just for you. Try it out and tell us how you like it!

Grilled Strawberry Shortcake Recipe

1 pound strawberries, hulled

1 pound butter cake, cut in 1-inch cubes

1 tablespoons brown sugar

1 pint Greek yogurt

1 pint heavy cream

1 teaspoon vanilla extract

2 tablespoons granulated sugar


Bamboo skewers

Canola oil and old dish towel to oil grill


Preheat grill to medium high. Clean, rinse and drain strawberries and toss with brown sugar. Skewer strawberries and cake cubes, one of each on each skewer.

Whip cream, yogurt and sugar. Set aside.

Use dish towel and oil to wipe grill grates just before putting skewers on, this will keep cake from sticking.

Grill one side of each strawberry shortcake skewer for 30-60 seconds. Flip then grill for 30-60 more seconds.

Remove and serve with whipped cream and yogurt for dipping.
