Recipe: Soul Healthy Cornbread
Cornbread is a popular southern comfort food. This version is tasty and healthy. Pair it with your favorite soup, stew or chili.

Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup low-fat buttermilk
- 1/2 cup applesauce, unsweetened
- 4 egg whites
- 2 tablespoons vegetable oil
- Vegetable oil spray
Preparation
- Preheat oven to 400 degrees. Lightly spray an 8-inch square pan with vegetable oil cooking spray.
- Mix cornmeal, flour, sugar, baking powder and salt in a medium sized mixing bowl.
- In a separate mixing bowl, combine buttermilk, applesauce, egg white and oil. Add to flour mixture and stir just until blended. Pour the batter into the sprayed pan and shake to make it level.
- Bake until a toothpick inserted in the center comes out clean, about 25 minutes.
