Peanut Butter Energy Squares

These no-bake energy bars are a fun recipe to make with kids, and it doesn’t heat up the kitchen. It’s the perfect quick snack to get over the afternoon slump!

Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 2 cups rolled oats
  • 1/2 cup raisins (or dried cranberries)
  • 1/2 cup shelled pistachios
  • 1/2 teaspoon salt
  • Cooking oil spray

Instructions
 

  • Line an 8x8-inch baking pan with wax paper, leaving some extra to hang over the sides. Lightly spray with cooking spray. Chop pistachios.
  • In a large bowl, mix peanut butter and maple syrup. Stir in oats, raisins, pistachios and salt. Spread the mixture into prepared pan and press in firmly.
  • Refrigerate until thoroughly chilled, about 1 hour. Cut into 16 squares.
