Broccoli with Orange Sauce

This colorful and tangy vegetable side dish is a great way to increase your servings of vegetables. Finicky eaters may be surprised to find that they like broccoli!

Ingredients
  

  • 3-1/2 cups broccoli florets
  • 1 medium red or yellow bell pepper
  • 2 tablespoons finely chopped onion
  • 1 tablespoon butter
  • 1 clove garlic
  • 1-1/2 teaspoons cornstarch
  • 2/3 cup orange juice
  • 2 teaspoons Dijon-style mustard

Instructions
 

  • Wash broccoli and peppers.
  • Cut peppers into 1-inch pieces. Peel and chop onion and garlic.
  • In a medium saucepan cook broccoli and sweet pepper in a small amount of boiling, lightly salted water about 8 minutes or until broccoli is crisp-tender; drain. Cover and keep warm.
  • Meanwhile, for sauce, in a small saucepan melt butter over medium heat. Add onion and garlic; cook until onion is tender.
  • In a small bowl, combine cornstarch, orange juice and mustard. Stir until smooth.
  • Add cornstarch mixture to onion and garlic. Cook and stir until thickened and bubbly. Cook, stirring for 2 minutes more.
  • Pour the sauce over the broccoli mixture; toss gently to coat.

  • Choose tight, compact floret clusters. More open ones indicate age.
  • Broccoli stems should be firm but not woody.
  • Store broccoli in a plastic bag in the refrigerator and use within a week. Wash just before using.
