Lentil Soup
Ingredients
- 2 tbsp olive oil
- 1 small onion
- 1 garlic clove
- 2 celery stalks
- 1 c c lentils
- 6 cups broth
- 2 sprigs parsley
- s/p to taste
- lime wedges to serve
Instructions
- Rinse produce.
- Mince garlic. Chop onions, carrots, celery, andparsley.
- Heat oil in large pot
- Saute onions and garlic over medium-high heat for about 5 minutes.
- Add celery and carrots and cook for 10 minutes at medium heat.
- Stir in lentils, broth, and parsley.
- Bring to a boil and then reduce heat to a simmer.
- Let cook for 25-30 minutes.
- Add s/p to taste.
- Serve with lime wedges and enjoy!
