Lentil Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion
  • 1 garlic clove
  • 2 celery stalks
  • 1 c c lentils
  • 6 cups broth
  • 2 sprigs parsley
  • s/p to taste
  • lime wedges to serve

Instructions
 

  • Rinse produce.
  • Mince garlic. Chop onions, carrots, celery, andparsley.
  • Heat oil in large pot
  • Saute onions and garlic over medium-high heat for about 5 minutes.
  • Add celery and carrots and cook for 10 minutes at medium heat.
  • Stir in lentils, broth, and parsley.
  • Bring to a boil and then reduce heat to a simmer.
  • Let cook for 25-30 minutes.
  •  Add s/p to taste.
  • Serve with lime wedges and enjoy!
