Fresh Fig and Avocado Grilled Cheese
Jazz up your traditional grilled cheese sandwich with fresh figs, avocado and baby spinach. The combination of flavors is perfectly balanced and delicious!
Ingredients
- 2 slices sourdough bread
- 1-2 fresh figs
- 1/2 large avocado
- 1/4 cup baby spinach
- 2 slices white cheddar cheese (about 2 ounces)
- 1 tablespoon butter
Instructions
- Rinse the figs, avocado and baby spinach.
- Slice the figs into thin disks.
- Peel, pit and slice the avocado.
- Slice or tear the spinach, if desired.
- Heat a skillet to medium heat while you assemble your sandwich.
- Butter the outside of each piece of bread.
- Stack the avocado, figs and spinach on the bottom slice.
- Put the cheese on top and then add the other slice of bread.
- Cook until the bottom piece of bread is toasted. Then flip the sandwich and cook until the cheese is melted.
- Cut in half and enjoy!

- Figs vary in size and color depending on the variety. The skin can be green, brown, purple, yellow or white.
