Fresh Fig and Avocado Grilled Cheese

Jazz up your traditional grilled cheese sandwich with fresh figs, avocado and baby spinach. The combination of flavors is perfectly balanced and delicious!

Ingredients
  

  • 2 slices sourdough bread
  • 1-2 fresh figs
  • 1/2 large avocado
  • 1/4 cup baby spinach
  • 2 slices white cheddar cheese (about 2 ounces)
  • 1 tablespoon butter

Instructions
 

  • Rinse the figs, avocado and baby spinach.
  • Slice the figs into thin disks.
  • Peel, pit and slice the avocado.
  • Slice or tear the spinach, if desired.
  • Heat a skillet to medium heat while you assemble your sandwich.
  • Butter the outside of each piece of bread.
  • Stack the avocado, figs and spinach on the bottom slice.
  • Put the cheese on top and then add the other slice of bread.
  • Cook until the bottom piece of bread is toasted. Then flip the sandwich and cook until the cheese is melted.
  • Cut in half and enjoy!

  • Choose soft, dry figs that are plump.
  • Avoid wrinkled, bruised or discolored figs.
  • Figs vary in size and color depending on the variety. The skin can be green, brown, purple, yellow or white.
  • Figs are only found in grocery stores for a short period of time each year. Plan your meals accordingly.
